A rather yummy Coffee Cake Recipe in time for Mother’s Day

A yummy Coffee Cake Recipe
I mentioned, in earlier posts, that I was doing Slimming World.  See my post here and here for a re-cap.  I managed to lose 1 stone, yep that’s right, 1 whole stone! Go me!

I was delighted with myself and I have managed to keep it off. So in order to give myself a treat, I made this rather fabulous coffee cake.  I love making this cake and it always seems to go down well with any visitors who call, and as it’s Mother’s Day Sunday, I thought this would go down a treat with my Mother & me of course.

Here’s the recipe. It’s pretty easy enough to make & just delicious with coffee or maybe a cappuccino!

Coffee Cake Recipe

You will need the following:

  • 8 inch square cake tin with 2 inch sides
  • Food Processor or a hand held mixer will suffice

Ingredients:
200g / 7oz of butter, softened
200g / 7oz of castor sugar
3 eggs
325g / 11 1/2oz plain flour, sifted
3tsp baking powder
150ml / 5fl oz milk
2tbsp coffee essence – Camp or Irel

Buttercream Icing
200g / 7oz butter, softened
150g / 5oz icing sugar, sifted
2tsp vanilla extract
3tbsp milk

  • Method:
    Preheat the oven to 180c deg or Gas mark 4. Line your cake tin with a cake liner or some parchment paper.
  • Cream the butter until soft with your mixer, then add the sugar and mix well.  Whisk in the eggs one at a time and fold in the remaining ingredients.  You could put all the sponge ingredients in the mixer and whiz them until combined but I prefer to do it the old way.
  • Put the mixture into your tin and smooth it over with a knife.  Bake in the oven for 40mins or until a skewer comes out clean.
  • When baked, remove from oven and allow to cool for 10 minutes.  Next remove the cake from the tin and allow to cool on a wire rack.
  • While the cake is cooling you can make the buttercream icing.  Put all the ingredients for the buttercream icing in your mixer and whiz until it’s light and fluffy.
  • Put your cake on your nice fancy plate and spread the icing over the top of the cake with your palette knife, dust with a sprinkle of cocoa powder and add some chocolate chips or coffee beans to finish it off. Slice it up & enjoy … Yum!

Irish Scones … a recipe

Irish Scones a quick Recipe

I make these little scones all the time for my family. They are quick & easy to make and perfect with a nice cup of tea. I thought I would share ….

Ingredients:
500g / 1Ib 2oz Plain Flour
1tsp bicarbonate of soda
2 tsp cream of tartar
1tsp sea salt
125g / 41/2oz cubed cold butter
25g / 1oz caster sugar
1egg, beaten
275ml / 9floz buttermilk
50g / 2oz caster sugar or granulated sugar

  • Method:
    Preheat the oven to 220c deg or gas mark 7
  • Sift the flour, bicarbonate of soda, cream of tartar and salt in a bowl. Rub in the butter with your fingertips until the mixture looks like breadcrumbs.  Add the sugar and mix well.
  • Mix the beaten egg with the buttermilk, then add this to the dry ingredients.  Then mix your ingredients together to make it into a moist dough.
  • Place the dough on a lightly floured surface and knead lightly to bring the mixture together. Next press it out and using a cutter or the top of a glass make your scone shapes. (Roughly about 2cm thick.
  • Brush the scones with a little bit of the egg and buttermilk wash and sprinkle a little bit of sugar on the tops if you want.  Place in the oven and bake for approx 12/15 minutes or until they turn a lovely golden brown.
  • Transfer to a wire rack to cool or just dive in!

Sometimes to mix it up, I add some cranberries or raisins.  Just add in 100g / 3 1/2 oz to your dry ingredients.  You could also add in some chocolate chip pieces, these go down well with the kids.

They are lovely with some butter and jam and a lovely cup of tea.  Hope you enjoyed this recipe, till next time!

Marmalade Cake

A simple, but yummy recipe for a Marmalade Cake. I posted a picture over on my Instagram page, and a lovely Instragrammer, Lise @isntshelovely_vintage, looked for the recipe, so here it is.

My Dad loves this cake, he sometimes puts butter on it, my parents put butter on everything, it has to be an Irish thing! But it can be lovely served up with some whipped cream. Yum!

Slimming World, Brown Bread & Me

So, me & bread, not exactly friends are we? Makes me bloated & sluggish but there’s always a taste of more isn’t there ? I blame the yeast! One slice is never enough and when it’s toasted with lashings of butter and jam, well just yummy yum yum! And it has to be a white sliced pan, none of that crap wholemeal or multi seed, you are just kidding yourself!

But Slimming World & bread don’t really mix, you get an allowance of 60g of any wholemeal bread which is just cruel. I had to actually weigh this to find out what exactly 60g was in bread terms and it’s just a sad little slice, so goodbye bread!

But I then came across an old recipe I had for brown bread, that a lovely relative had passed down. I had not made this in ages, just out of pure laziness really. Now, this was all goodness wholemeal bread, no yeast and lovely buttermilk & honey added, I couldn’t resist making it.

So I crossed myself and said a prayer to the Slimming World gods and made it and yes, it was as delicious as I remembered!

So for anyone who wants the recipe here it is.  Its very simple and easy to make, no fancy ingredients, you should have these in the cupboard.
It’s a very simple recipe, just mix the dry ingredients with the wet and into the tin they go.  I dont normally use all the buttermilk as I find the mixture can get too wet, just gradually add & see how you go.

 

Now, I know you are going to ask me how many syns are in it.  Haven’t a clue!, sometimes you just have to enjoy your food without worrying about the calories/fat/sugar content & in all honestly I think this bread is a better option to some of the plastic bread out there.

Getting back to Slimming World, it is working for me, weigh in’s are going well, eating a lot healthier, although paying someone €9 a week to tell me how much I weigh is a bit mad!
