2 Christmas Gifts that won’t cost the earth & a cupcake recipe!

Gifts in a Jar
Do you want to give a gift at Christmas, a token present that won’t cost the earth,  that just shows your appreciation in some small way?  I know I value handmade homemade presents rather than getting the box of chocolate Kimberley Mikado, ( Irish bickies that have been around for donkeys years,)  nothing wrong with getting or receiving these by the way!

This year my son started junior infants and has a great teacher that goes above and beyond. He has some special education needs, so I wanted to give a little something on his behalf and something that he helped create.  Looking around Pinterest for some inspiration, I came across gifts in a jar and bingo! I loved this idea.

Here’s some I did up …..

Gift in a Jar: Just add drinking chocolate, chocolate pieces & Marshmallow. Dress up your jar with a nice label and gift tag. Very quick & easy to do. Perfect for Christmas gifts and teacher appreciation gifts

Here’s my list of supplies:

  • Some empty jars, I tend to keep the fancy jars, just in case for future projects like this.
  • Drinking Chocolate
  • Chocolate chip pieces
  • Marshmallows
  • I had some lazertran transfer paper which I used to print out a graphic from Canva and baked it on, but you can just print out a graphic and stick it on.  I wanted to test out the transfer paper and this was a good time as any.
  • I cut and glued some scrap paper I had for the lids and used a stamp in my stash.
  • Ribbon or twine
  • Gift tags
  • Cellophane to wrap the jar in

Just add the drinking chocolate, (you can let the kids help here) and layer the chocolate pieces and the marshmallows.  Dress up your jar and hey presto all done.  Nice and quick and it won’t cost much.

And for no. 2, I decided to make some mini cupcakes and put them again into a jar.  Jar was painted and decoupaged before hand.  I then wrapped it in some cellophane and added a gift tag and some ribbon and hey presto all done!Gift in a Jar: Just add some mini cupcakes, gift tag & ribbon!

Here’s the recipe for the mini cupcakes

Ingredients:
41/2oz softened butter
41/2oz caster sugar
1 tsp vanilla extract
2 eggs
5oz plain flour
1/4tsp baking powder

  • Preheat oven to 190degC or Gas mark 5. Line your cupcake tin.
  • Cream the butter in a large bowl until soft
  • Add the sugar and vanilla extract and beat until the mixture is light and fluffy
  • Add the eggs one at a time, beating continuously then sift in the flour and baking powder.

Note: You can if you like put the butter, sugar, eggs, vanilla extract and flour into an electric food mixer and whiz  until the mixture comes together. I prefer to do it in stages, I am anal like that!

  • Divide the mixture evenly between the paper cases.
  • Bake these in the oven for 10/12 minutes or until they are golden and springy to touch.
  • Transfer to a wire rack to cool
  • You can if you wish after they have cooled decorate to your heart’s desire or let your smallie attack decorate!Mini Cupcakes - recipe here!
